Avocado Key Lime Pie

Prep Time: 15 minutes
Cook Time: 3 hours minimum to chill

1 cup sieved avocado pulp
1 (14 ounce) can sweetened condensed milk
1 teaspoon grated lime zest + 1/2 cup fresh lime juice
2 egg yolks
9 inch ready made pie crust

 

  • Combine sweetened condensed milk, lime zest, lime juice, lightly beaten egg yolks, and salt; blend until mixture thickens.
  • Stir in avocado pulp.
  • Pour filling into pie shell.
  • Chill pie for several hours.
  • Garnish with whipped cream, and serve.

I haven't made this one yet but plan to soon. Would it taste okay with the eggs not cooked at all in this pie?

Hi there, I love Key Lime Pie and the avocado will add a wonderful creamy texture. Regarding the eggs they won’t have a strong taste but if you are concerned I don’t necessarily think you need to add them at all. Enjoy. Zoe

what do you mean by "sieved avocado pulp"?

It just means squishing the avocado through the sieve with e.g. a fork or spoon. You could also just remove any unwanted bits, and chop it up into smaller pieces.
