1 avocado
1 cup cooked small prawns (or 1 sml can)
1/4 cup thousand island dressing
Salt & pepper
2 lettuce leaves
- Cut avocado in half an remove stone.
- Scoop out flesh and cut in small cubes.
- Mix with prawns and thousand island dressing. Season with salt & pepper.
- Spoon back into avocado skin which is lined with a lettuce leaf and serve.
Alternative:
You can sprinkle some grated cheese on top and melt under griller before serving.
