1 Lemon
1 small tin Crab Whitemeat
1 tablespoon Olive Oil
1 teaspoon French Mustard
1 teaspoon Red Wine Vinegar
1/2 cup Breadcrumbs
1/4 cup finely grated Parmesan Cheese
1/3 teaspoon mild Paprika
- Cut Avo in 2 as normal.
- Prick all over with a toothpick and rub flesh with half a cut lemon.
- Mix crab whitemeat with olive oil, french mustard, red wine vinegar and a pinch of salt.
- Mix breadcrumbs with finely grated parmesan cheese and paprika.
- Put the crab mixture on each Avo half.
- Put the breadcrumb mixture on top of the crab mixture.
- Grill for 2 to 3 minutes until golden brown.
- Serve with 1/4 of a lemon each.
