Avocado Potato Salad

1 1/2 kg chat potatoes
5 green spring onions, sliced thinly
Salt and pepper, to taste
2 avocados, coarsely chopped
1/2 cup whole egg mayonnaise
1 1/2 tblsps lemon juice
2 cloves garlic, crushed
1/4 cup sour cream
35g packet spring vegetable soup mix
- Boil, steam or microwave potatoes until tender. Drain. Cool for 10 minutes. Cut potatoes into quarters and place in a large bowl.
- To make avocado dressing, place avocados, mayonnaise, juice, garlic, sour cream and soup mix in a food processor. Process until smooth.
- Combine potatoes, dressing and spring onions in a large bowl. Season with salt and pepper.
- Serve salad garnished with extra spring onions
