Prawn & Avo dEELite

2 ripe avocados
1kg Australian king or banana prawns, cooked or green to suit
2 tablespoons of lemon juice
Freshly ground pepper
half a loaf of freshly baked bread or a packet of gourmet healthy crackers.

Optional:
Choose one or more of 300 grams seafood extender
100 grams light sour cream
50 grams light mayonnaise
Splash of vinegar or soy sauce.
For the seafood intolerant, cooked chicken, turkey or lean leg ham can be substituted.

  • Peel two avocados, remove and mash the flesh in a crockery bowl or baking dish.
  • Add lemon juice and pepper to taste.
  • Peel 1kg cooked Australian king or banana prawns and slice each prawn into pieces.
  • Work through avocado mash.
  • Serve with fresh bread or healthy crackers.
Variations:
  • To make the Delight go further add seafood extender which worked through will take on the flavour of the prawns.
  • Other delicious additions include light mayonnaise, light sour cream, vinegar or soy sauce.
  • If the weather is a little chilly, buy green pawns, cook, peel and add to the avo dish.
  • On warmer days, dish can be refrigerated for a few hours to allow the flavours to meld together before the guests arrive.
