Avocado Pineapple Relish

1 avocado
2 teaspoons lemon juice
1/2 cup (60g) diced pineapple
1/4 cup (30g) finely chopped red salad onion
1 tablespoon chopped fresh mint (or basil)
Salt and pepper
A little hot chilli paste or powder or 2-3 teaspoons sweet chilli sauce
- Cut the avocado into small dice and plate in a bowl. Add lemon
juice and pineapple, the salad onion and chopped herbs.
- Toss gently, and season to taste with salt and pepper, the chilli
paste or powder, or the sweet chilli sauce.
- Transfer to a covered dish and refrigerate for at least 1 hour
before using.
- Serve with grilled fish or chicken, or with barbecued kebabs,
steaks, pork chops or lamb cutlets
