Dragons Kebabs With Fiery Avo Salsa

12 satay chicken kebabs
1 avocado, peeled, seeded, finely chopped
2tbsp unsalted cashews, coarsely chopped
1tbsp lime juice
2tbsp coarsely chopped coriander

  • Preheat a barbecue or chargrill on high. Add the satay chicken kebabs and cook for 3-4 minutes each side or until cooked through. Transfer to a serving platter.
  • Meanwhile, combine the avocado, cashews, lime juice and coriander in a medium bowl and gently stir to combine. Spoon salsa over the chicken skewers and serve immediately.
Tips
Make your own chicken kebabs by marinating cubes of chicken in a bowl and feeding them onto a cooking skewer.
