8 chicken herb and garlic kebabs
4 long wholemeal bread rolls, split
1 avocado, peeled, seeded, mashed
1/4 cup reduced-fat natural yoghurt
- Preheat grill on high. Place the kebabs on an oven tray and cook under preheated grill, turning occasionally, for 8 minutes or until golden brown and cooked through. Remove from heat.
- Spread the avocado and yoghurt in each bread roll. Place 2 skewers in each roll, gently pull chicken pieces off and remove skewer. Serve immediately.
Try using other chicken kebabs such as hoisin, Moroccan or sundried tomato for something different.
Make your own chicken kebabs by marinating cubes of chicken in a bowl and feeding them onto a cooking skewer.
