Perfect Storm Pesto Chicken

1/4 barbecue chicken, skin and bones removed, coarsely shredded
2 tbsp bought basil pesto
2 tbsp low fat natural yoghurt
2 avocados, halved, seeded

  • Combine the chicken, pesto and yoghurt in a medium bowl. Gently toss to combine. Place the avocado halves on serving plates. Top with chicken mixture. Serve immediately. 
Use sundried tomato pesto and add toasted pine nuts for an alternative to basil pesto.
