Hotdoggies with Mustard Avo

8 thin fat-reduced pork or beef sausages
1 avocado, peeled, seeded, finely chopped
1 ripe tomato, finely chopped
1/2 red onion, finely chopped
1tbsp wholegrain mustard
8 long wholemeal breadrolls, split
Mixed salad leaves, to serve

  • Preheat a barbecue or chargrill on medium. Add the sausages and cook, turning occasionally, for 5-7 minutes or until cooked through. Remove from heat and set aside.
  • Meanwhile, combine the avocado, tomato, onion and mustard in a medium bowl, gently toss to combine.
  • Spoon the avocado mixture among the breadrolls. Top with a sausage and mixed salad leaves. Serve immediately.
Tips
Wholegrain mustard has a subtle mustard taste. Use a hot German or English mustard for a bigger kick if desired.
