Kids in the Kitchen

For children aged three to five years

Most of the recipes here require little or no cooking and may be prepared with children's involvement.

Pizza Face

Arrange your own funny face on a toasted half wholemeal English muffin spread with tomato paste or tomato sauce then mashed avocado. Use diced capsicum, sliced cherry tomatoes, sliced mushrooms and grated cheese to create eyes, mouth, nose, ears and hair. Optional: Place under the griller briefly to warm the toppings and melt the cheese.

Avocado Sushi

Fill Nori seaweed sheets with cooked short grain or sticky rice, thin avocado slices, sushi vinegar, bits of scrambled egg, fine strips of cucumber and grated carrot. Rolling them up is almost as fun as eating them!

Rainbow Mini Salad

Combine in a curve of lettuce leaf! For an individual serve:

1 tablespoons of avocado cubes, 1 cherry tomato halved, 1 strip of yellow capsicum

Optional extras: 1 teaspoon grated raw beetroot, 1 teaspoon grated raw zucchini, 1 segment ruby grapefruit, 1 finely chopped walnut. Dressing: 1 teaspoon of orange juice and ripped mint leaves.

Green Possum Pikelets

(makes about 8)

Mix together in a blender for 30 seconds: 1 egg, 1 cup wholemeal SR flour, ¾ cup milk, 1 tablespoon castor sugar, 1 teaspoon lemon juice, half a ripe avocado (peeled, deseeded and roughly mashed).

Extra ingredient for possum eyes and nose: ½ cup fresh or frozen blueberries.

Cook: Using a frying pan, electric pan or griddle, drop heaped tablespoons of batter into heated pan thinly wiped with butter or olive oil. Using a teaspoon, drop 2 extra blobs of batter on one edge of each pikelet to create possum ears. Place 3 blueberries into each pikelet for possum's eyes and nose. Cook about 1 minute or until bubbles appear on surface. Turn over and cook another minute or until golden and cooked through.  Eat just as they are!
