Avocado Chicken and Egg Salad

2 avocados, chopped into chunky pieces
1 BBQ chicken, skin removed & cut into pieces
4 hard boiled eggs, chopped
4 lean bacon rashers, chopped & crisped
6 spring onions, finely chopped
6 medium boiled potatoes, chopped


Dressing:

2tbsp olive oil
1tbsp white wine vinegar
4 (or more) heaped tablespoons good quality egg mayonnaise)
8-10  anchovy fillets, finely chopped
Cracked black pepper to taste

  • Make dressing by combining all ingredients.
  • Gently mix together rest of ingredients, add dressing and mix gently.
