Green Machine Avo & Zucchini Fritters

1 egg, lightly whisked
1/2 cup self-raising flour
2 green zucchini, ends trimmed, coarsely grated
1 avocado, peeled, seeded, finely chopped
100g shaved ham

  • Combine the egg, flour and zucchini in a medium bowl. Add half the avocado and gently stir to combine. Season with salt and pepper.
  • Spray a large non-stick frying pan with oil spray. Place over medium heat. Spoon four heaped tablespoonsful of mixture around the pan. Cook for 1-2 minutes each side or until golden brown and heated through. Transfer to a plate. Repeat with remaining mixture.
  • Top each fritter with remaining avocado and ham. Serve immediately.
