Winter avocado
Not many people realise that avocados are a winter fruit. This fabulous nutritious and versatile food can be
use in so many healthy and delicious ways.
Eating foods high in Vitamin E, A and C vitamin, like what’s found in avocados, will help your body keep your
immune system fighting fit and help ward off the common recurring weight gain issue that often happen over
the winter period. This is because the body's metabolism slows in the winter months and exercise levels often
are reduced. All these vitamins are found in avocados. So stock up this winter and ward off the winter cold12.
A healthy winter meal is:
BBQ lamb back strap with avo-potato mash11
Marinate the lamb-back strap in lemon juice, garlic and olive oil. BBQ for 3-4 minutes each side.
Serve with guilt-free avo-potato mash.
Guilt free avo-potato mash
Prep time: 10-15 minutes
Cook time: 20 minutes
Serves: 4-6 people
Ingredients:
2-3 large potatoes, scrubbed and cut into 1-inch chunks
1½ cups of cauliflower florets
2 tablespoons olive oil
½ an avocado
1 tsp of cumin
Salt and pepper to taste
Parsley for serving
A little hot water if needed
Method:
In a large saucepan place the chunks of potato into water and bring to the boil. When the water is boiling add
the cauliflower and cook for 20 minutes or until soft. Add all the remaining ingredients into a food processor
and blend until soft and fluffy. Serve the mash with a little olive oil, sea salt and parsley drizzled on top.
