Easy Avocado Pasta

3-4 ripe avocados cream
1 clove garlic, crushed
Olive oil
Lemon
Spaghetti

-GARNISH-

Rock salt
Flat leaf parsley
Parmesan cheese
Lemon wedges

  • Halve avocados and criss-cross the flesh with a sharp knife.
  • Over a bowl, squeeze the skin to release the fruit chunks from the skin.
  • Add a squeeze of lemon and lightly smash the avocado with the back of a spoon.
  • Leave some larger chunks for texture.
  • Over in a saucepan, add a teaspoon of good extra virgin olive oil and garlic.
  • Over medium heat, gently fry the garlic till lightly brown.
  • Add the avocado and fry off for only a minute.
  • Add a tablespoon of cream to loosen the sauce.
  • Keep sauce warm until the spaghetti is cooked.
  • Spoon generously over hot spaghetti and garnish with flat leaf parsley and parmesan.
  • Add lemon and salt to taste.

Notes:
1. This a good recipe for over-ripe avocados
2. This however does not keep. The sauce will discolour overnight, so make sure you eat it all!
3. Super cheap. The recipe will feed a family of 4 for around $10!
