Healthy Rich Tomato and Avocado Sauce

Prep Time: 5-10 minutes
Cook Time: 20-30 minutes

1 can of diced tomato
4 fresh tomato, roughly chopped
4 tbsps of tomato paste
1 brown onion, finely chopped
1 avocado, mashed
2-3 garlic cloves crushed
2 tbsp of chopped fresh basil
2 tbsp of chopped fresh parsley
2 tsp of dried oregano
1 tbsp of olive oil

  • Sautee the onion and oil in a little olive oil on a low temperature, cook until translucent.
  • Add the remaining ingredients apart from the avocados and simmer for 20-30 minutes.
  • Let the mixture cool and then mix through the avocado.
  • Serve on top of pasta, meatloaf or steamed vegetables.

I used this recipe with pasta and it worked really well. The avocado made the sauce nice and thick and creamy. A good quick recipe! I will definitely make it again.
