Avocado and Tomato Pasta

Cook Time: 20-25 minutes

1 avocado 
400g pasta
1 onion
1 punnet cherry tomatoes
Parmesan or low fat cheddar cheese, grated

  • Cook 400g pasta in boiling water for 12 – 15 minutes, until tender.
  • Drain well and set aside.
  • Cook 1 chopped onion in frying pan with 2 tbsp light olive oil until golden.
  • Add 1 punnet cherry tomatoes and cook for 5 minutes, until softened.
  • Add the pasta to the pan.
  • Add 1 cubed avocado and grated parmesan or low fat cheddar cheese.
  • Toss to combine.

I really love avo in pasta. For an easy weeknight meal, I like the above recipe. Adding some chicken to the recipe is also nice!
