Avocado and Chicken Noodles

4 x 73g packet chicken 2 minute noodles 99% fat free
¼ barbecue chicken, skin and bones removed, finely shredded
1 avocado, peeled, seeded, finely chopped
¼ cup chopped coriander
- Cook the noodles following packet directions. Divide evenly among serving bowls.
- Meanwhile, combine the chicken, avocado and coriander in a medium bowl. Spoon the avocado mixture over the noodles. Serve immediately.
Tips: Serve with a wedge of lime and extra herbs like mint and Thai basil with chopped chilli for a Thai-style twist.
