Avocado Salsa with Chicken Schnitzels

4 crumbed chicken breast schnitzels
Olive oil spray
1 avocado, peeled, seeded, finely chopped
2 ripe tomatoes, seeded, finely chopped
¼ cup coarsely chopped coriander
Salt & pepper to taste
- Preheat oven to 180°C. Line an oven tray with baking paper. Place the chicken schnitzels on the lined tray. Lightly spray with oil spray. Bake in oven for 10-12 minutes or until chicken is golden brown and cooked through.
- Meanwhile, combine the avocado, tomato and coriander in a small bowl. Taste, and season with salt and pepper.
- Spoon avocado salsa over the chicken schnitzel and serve immediately.
Tips: Add some chopped jalepeno chilli to the salsa for a fiery kick, or add a finely chopped red capsicum for added crunch.
