Avocado filled with Mexican Beef

Cook Time: 10 minutes

250g beef mince
30g pkt taco seasoning
1 fresh tomato, finely chopped
2 avocados, halved, seeded

  • Heat a large non-stick frying pan over high heat. Add the beef mince and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until beef changes colour and is cooked through. 
  • Add the taco seasoning and tomato and cook, stirring, for 1-2 minutes or until well combined and heated through.
  • Place the avocado halves on serving plates. Spoon the beef mixture evenly among each avocado. Serve immediately.
Tips: Add frozen corn and chopped red capsicum to the beef mixture for added colour.
