Asian Avocado and Salmon Sandwiches

100g tin of salmon in spring water
1 tbsp of salt reduced soy sauce or tamari soy sauce
½ cup grated carrot
1 tsp fresh ginger, grated finely
1 tbsp fresh mint, chopped finely
1 tbsp coriander, chopped finely
1 tsp lime juice
1 tbsp orange juice
½ tsp fresh chili, chopped finely (remove seeds too reduce spice)
1 cup rocket or mixed salad leaves
4 slices wholegrain bread
- Place all the ingredients apart from the bread and rocket into a mixing bowl and mix thoroughly.
- Lay the bread onto a tray and spoon 2-4 tbsp of the avocado and salmon mixture on two of the slices.
- Place the rocket on top and cover with the other slices of bread.
- Cut in half and serve.
