Spicy Avocado Salsa with Satay Chicken Kebabs

Serves: 6-8

Cook Time: 10 minutes

12 satay chicken kebabs
1 avocado (peeled, seeded, finely chopped)
2tbsp unsalted cashews (coarsely chopped)
1tbsp lime juice
2tbsp coarsely chopped coriander

  • Preheat a barbecue or chargrill on high.
  • Add the satay chicken kebabs and cook for 3-4 minutes each side or until cooked through. Transfer to a serving platter.
  • Meanwhile, combine the avocado, cashews, lime juice and coriander in a medium bowl and gently stir to combine.
  • Spoon salsa over the chicken skewers and serve immediately.
Make your own chicken kebabs by marinating cubes of chicken in a bowl and feeding them onto a cooking skewer.
