Spicy Avocado Salsa with Satay Chicken Kebabs

12 satay chicken kebabs
1 avocado (peeled, seeded, finely chopped)
2tbsp unsalted cashews (coarsely chopped)
1tbsp lime juice
2tbsp coarsely chopped coriander
- Preheat a barbecue or chargrill on high.
- Add the satay chicken kebabs and cook for 3-4 minutes each side or until cooked through. Transfer to a serving platter.
- Meanwhile, combine the avocado, cashews, lime juice and coriander in a medium bowl and gently stir to combine.
- Spoon salsa over the chicken skewers and serve immediately.
