- Beat 8 eggs, ½ cup milk, salt and pepper in a bowl.
- Put 3 tbsp light olive oil in a large non-stick frying pan.
- Heat on medium heat.
- Add the egg mixture and stir gently until starting to set.
- Stir through 2 thickly sliced avocados.
