Avocado Scrambled Eggs

Cook Time: 2 minutes

2 avocados
8 eggs
Milk
Olive oil
Salt and pepper

  • Beat 8 eggs, ½ cup milk, salt and pepper in a bowl.
  • Put 3 tbsp light olive oil in a large non-stick frying pan.
  • Heat on medium heat.
  • Add the egg mixture and stir gently until starting to set.
  • Stir through 2 thickly sliced avocados.
