Avocado Toast Finger with Soft-Boiled Eggs

½ avocado, peeled, seeded, mashed
2 slices wholemeal bread, toasted
- Place eggs in a small saucepan of cold water. Bring to the boil over high heat. Reduce heat to medium and simmer gently, stirring occasionally for 3 minutes until soft-boiled or cooked to your liking.
- Spread the avocado evenly over each slice of toast. Use a small sharp knife to cut each slice into fingers.
- Place the eggs in egg cups, serve with avocado toast fingers.
Tips: Soft-boiled eggs with their runny yolks are great for dipping toast fingers into, but if you prefer hard-boiled eggs, removed the shell and slice, and place on the toast fingers to serve.
