Avocado and Tomato Baked Potato

Cook Time: 45 minutes

1 avocado
4 medium potatoes
1 tomato
Low fat sour cream

  • Wrap 4 medium potatoes individually in cooking foil.
  • Cook in 180ºC oven for 45 minutes, until tender.
  • Dice the flesh of 1 avocado and 1 tomato.
  • Place 1 tbsp of low fat sour cream in the centre of each potato.
  • Spoon tomato and avocado into each potato.

These look good. Though, I'm going to add left over bolognese sauce with it, and Greek yogurt instead of sour cream. Yum!
