Avocado, Tomato, Lime and Coriander Salsa

2 ripe avocados, peeled, stone discarded, diced
Juice of half a lime (about 2 teaspoons)
Finely grated rind of half a lime (1-2 teaspoons)
1 tomato, de-seeded, finely chopped
2 shallots, finely chopped
Sweet chilli sauce, 2 teaspoons (optional)
Fresh coriander leaves, 1 tablespoon, finely chopped
- Place all ingredients in a bowl and combine.
- Serve either as a dip, on bruschetta, or as a side for barbequed meats, fish or poultry.
