Sharon's Stupendous Avo & Veal Schnitzel & Wrap

2 x Schnitzels
Garlic Powder
Chilli Powder
2 x eggs
Breadcrumbs (homemade from wholemeal or rye or white)
2 x Wraps
Mustard oil or Cold Compressed Olive Oil
1/4 red onion
1 Garlic bulb
2 x tabelspoons sweet chilli sauce
2 tablespoons lemon juice
1/2 cup cheese
slices of tomato

  • To coat the schnitzels - Place wholemeal flour, garlic powder and chilli powder in plastic bag Place snitzels into this mixture and coat evenly.
  • Beat 2 eggs and then place coated schnitzels in egg mixture then place schitzels into homemade breadcrumbs (or commercially bought if you wish but I find homemade from wholemeal bread the best using crust as well for a crunchy coating).
  • Cook snitzel in Mustard oil or cold compressed olive oil until golden brown on each side.
  • In the mean time: Chop 1/4 red onion finely, Chop 1 Garlic bulb finely (or as much as you like). Then mix all with 2 tablespoons of sour cream, 1 tablespoon sweet chilli sauce, and 2 tablespoons lemon juice. Mash your avocado up and add above ingredients.  
  • Spread your wrap generously with all the avocado (for a change spread your wrap with hot english mustard or mild mustard before spreading the layer of avocado).
  • Sprinkle a layer of tasty cheese cut your schitzel into pieces and place over cheese.
  • Add slices of tomato Salt & Pepper Cook in sandwich maker until wrap is golden brown and cheese has melted.
