Fruity Avocado Dressing

Serves: 4-6 people

Ingredients:
2 medium ripe avocados
1 cup fresh orange juice (use more or less to change the consistency)
1 tsp curry powder
1 tsp of cumin powder
¼ of a cup of fresh herbs, parsley, coriander or basil, stalks removed
1 clove of garlic, remove the skin
Pepper and sea salt to taste

Utensils:
Blender
Measuring cups
Measuring spoons

  • Peel and de-stone the avocado.
  • Blend all the ingredients together in a food processor until smooth.
Tip:
You can make this as thick as you like. It’s fantastic with cut up vegetables as a snack or to pour over salad or steamed vegetables.
