Rainbow Mini Salad (For Ages 3yrs - 5yrs)

1 lettuce leaf
1 tablespoons of avocado
1 cherry tomato
1 strip of yellow capsicum

Optional extras:
1 teaspoon grated raw beetroot
1 teaspoon grated raw zucchini
1 segment ruby grapefruit
1 finely chopped walnut

Dressing:
1 teaspoon of orange juice
Fresh mint leaves

  • Combine in a curve of lettuce leaf! For an individual serve:
  • 1 tablespoons of avocado cubes, 1 cherry tomato halved, 1 strip of yellow capsicum
  • Optional extras: 1 teaspoon grated raw beetroot, 1 teaspoon grated raw zucchini, 1 segment ruby grapefruit, 1 finely chopped walnut.
  • Dressing: 1 teaspoon of orange juice and ripped mint leaves.
