Mini Prawn and Avocado Muffin Pizzas

Cook Time: 15 minutes

3 English muffins (cut in half so there are 6 round pieces)
1/2 cup of good quality tomato based pizza sauce
1 avocado (pip and skin removed, cut into slices)
18 prawns (peeled and cooked)
1/2 cup mozzarella cheese (low fat)

  • Pre-heat the oven to 180C.
  • On a baking tray place the english muffins.
  • Spread approximately 1tbsp of tomato based pizza sauce on each half followed by three prawns on each.
  • Add sliced avocado on top and sprinkle with the cheese.
  • Bake for 15 minutes and serve.

That sounds delicious and I can't wait to try - but serves 6? I hope we are talking entree size here, becasue I recon I could comfortably demolish 4 halves myself.

Very nice recipe, I added 1/2 slice of bacon on top of row prawns for variety.
