Mini Prawn and Avocado Muffin Pizzas

3 English muffins (cut in half so there are 6 round pieces)
1/2 cup of good quality tomato based pizza sauce
1 avocado (pip and skin removed, cut into slices)
18 prawns (peeled and cooked)
1/2 cup mozzarella cheese (low fat)

- Pre-heat the oven to 180C.
- On a baking tray place the english muffins.
- Spread approximately 1tbsp of tomato based pizza sauce on each half followed by three prawns on each.
- Add sliced avocado on top and sprinkle with the cheese.
- Bake for 15 minutes and serve.
