Seafood Platter with Avocado Salsa

Avocado Salsa:
2 avocados, diced
1 punnet of cherry tomatoes, chopped
1 red onion, finely diced
1 lime
2 tablespoons olive oil
salt and pepper
Seafood Platter:
12 Queensland scallops in the half shell
12 cooked prawns
1 small cooked lobster, halved
12 oysters
1 small jar of salmon roe
- Place salsa ingredients in a bowl.
- Season and toss lightly.
- Place scallops in a steamer over simmering water. Steam for 2 minutes.
- Arrange seafood ingredients on a large platter.
- Place teaspoons of salmon roe in the oysters.
- Place small bowl containing salsa in the middle and garnish with lime.
