Seafood Platter with Avocado Salsa

Serves: 6
Prep Time: 10 minutes
Cook Time: 5 minutes

Avocado Salsa:
2 avocados, diced
1 punnet of cherry tomatoes, chopped
1 red onion, finely diced
1 lime
2 tablespoons olive oil
salt and pepper

Seafood Platter:
12 Queensland scallops in the half shell
12 cooked prawns
1 small cooked lobster, halved
12 oysters
1 small jar of salmon roe

  • Place salsa ingredients in a bowl.
  • Season and toss lightly.
  • Place scallops in a steamer over simmering water. Steam for 2 minutes.
  • Arrange seafood ingredients on a large platter.
  • Place teaspoons of salmon roe in the oysters.
  • Place small bowl containing salsa in the middle and garnish with lime.
