Soy and Avocado Guacamole

2 ripe avocados, halved, seeded, peeled
1 long fresh red chilli, seeded, finely chopped
1 tsp finely grated fresh ginger
2 tsp light soy sauce
Prawn crackers, to serve
- Place the avocado, chilli, ginger and soy sauce in a medium bowl.
- Use a fork to mash until smooth.
- Spoon guacamole into a serving bowl.
- Serve immediately with prawn crackers, if desired.
