The cooler weather has arrived. And so has
the temptation to tuck into the comfort
foods you love. It's important though to eat
healthy foods all year round and keep your
immune system fighting fit.
So here are some easy sandwich ideas
that'll warm you up and keep you healthy.
You can make them as a meal or as
a quick snack for the whole family.

Serves: 4
Preparation Time: 5 mins

Ingredients:
8 slices Wholemeal bread
16 slices Roast chicken
2 Avocados
1 bunch Snow pea sprouts
4 tsp Sweet chilli sauce
Butter or margarine

Method:


  1. Cut avocado in half, remove seed and skin, cut flesh into slices.
  2. Lay out 4 slices of bread, spread and place chicken, avocado, sprouts
    and sweet chilli sauce on top and cover with remaining bread.
  3. Spread butter over the top of the bread, turn over and place buttered
    side onto a sandwich grill, spread butter onto the remaining side, close
    the grill and cook until golden.
  4. Cut sandwich diagonally in half and serve.

Tips:
Serve with coleslaw salad for a light lunch.





Serves: 4
Preparation Time: 5 mins

Ingredients:
8 slices Wholegrain bread
4 tsp Grain mustard
16 slices Roast beef
2 Avocados
Butter or margarine

Method:


  1. Cut avocado in half, remove seed and skin, cut flesh into slices.
  2. Lay out 4 slices of bread spread on mustard, place beef and avocado slices
    on top and cover with remaining bread.
  3. Spread butter over the top of the bread, turn over and place buttered side
    onto a sandwich grill, spread butter onto the remaining side,
    close the grill and cook until golden.
  4. Cut sandwich diagonally in half and serve.

Tips:
Serve with a fresh rocket, tomato and olive salad.





Serves: 4
Preparation Time: 15 mins
Cooking Time: 3 mins

Ingredients:
4 English muffins
2 Avocados
1x 420g Tuna
½ Red onion (diced)
¼ bunch Parsley (chopped)
2 tbsp Sweet chilli sauce
2 tbsp Mayonnaise
Salt and pepper to taste
8 slices Swiss cheese

Method:


  1. Cut muffins in half horizontally and toast.
  2. Cut avocado in half, remove seed and skin,
    scoop out the flesh into a bowl.
  3. Add tuna, onion, parsley, sweet chilli sauce and mayonnaise.
  4. Season to taste and mix well with a fork.
  5. Place equal amounts of avocado/tuna mix onto
    all eight muffin halves.
  6. Top with a slice of cheese and place under the grill
    until cheese is melted.

Tips:
For extra spice add some fresh chilli to the tuna mix.
